Here are the ingredients you need to prepare to make a Classic S’mores Banana Boat:

  • 1 banana
  • 2 tablespoons milk chocolate (chopped from a bar or use chocolate chips)
  • 8 mini marshmallows
  • 1 square graham cracker (crumbled)

Here’s how I make the classic S’mores Banana Boat:

  • Take a banana with the peel on and cut it down the middle (on the concave side). Don’t cut through, just let the knife graze the shell on the other side. Gently separate the peel and banana to form a bag.
  • Stuff the middle with chocolate and mini marshmallows (or whatever filling you like).
  • Wrap bananas in foil. Place the bananas on the campfire or grill and grill until the filling is melted and the bananas are warmed through, about 10 minutes.
  • Carefully unfold the foil and top with crushed graham crackers. Eat and enjoy!

Banana Boats are usually wrapped in foil for baking, but I changed it up a bit to make it safer. Although there is no clear information on the health risks of cooking directly in aluminum, I use a combination of aluminum foil and oiled paper instead.

Here’s how I do it:

Depending on the size of your bananas, cut a 1 ft x 1 ft square of heavy-duty foil (I usually use Reynolds Wrap). Then, cut a corresponding 1 ft x 1 ft square of tar paper. I use the If You Care brand—FSC certified, biodegradable, unbleached, and chlorine-free, which I like to use when camping.

Lay the foil over the foil and fold the corners of the foil over the foil to hold it in place. Once you’ve filled the banana with filling, completely wrap the banana with oil paper on the inside and foil on the outside. Then you can put it on the grill!

For a dying campfire with embers, grill your banana boat directly in the coals. Use a stick to spread the embers evenly, then place your banana boat with the top facing up in the middle of the coals.

Use tongs to remove the banana boat from the stove and gently squeeze. If it’s still hard, you need to bake more. If it feels soft and mushy, it’s ready to eat. You should be careful when opening the foil, pay attention to condensation!
