Note: The ingredients listed here will make 16 Banana Pancakes. Feel free to scale up or down by adjusting the proportions to suit the number of pancakes you need to make.

Essential Equipment

You need to bring essential tools to make your pancake making experience easier:

  • Skillet or Griddle: You can use a nonstick pan or a griddle to keep the crepes from sticking. I like to use a GSI pan, but a tempered cast iron pan is great too—just don’t forget the butter!
  • Camp Stove: The Camp Chef stove is my choice. With two powerful burners and awesome heat control, it’s perfect for getting those pancakes just the right shade of golden brown.
  • Mixing Bowl & Fork: A medium to large mixing bowl and a fork for mixing the pancake batter.
  • Spatula: A silicone or plastic spatula is perfect for a nonstick pan. If you’re using a cast iron pan, a metal spatula will do the trick.

Now, let’s start cooking with us! Just follow a few simple steps and you will have delicious Banana Pancakes right at the campsite:

At Home

To save time, we mixed the flour and packed the brown sugar, cinnamon, baking powder, and salt in a bag. The rest of the ingredients were also packed tightly for an easy campsite prep.

At Camp

Now it’s time to make pancakes at the campsite. Since you’ve got everything ready at home, your breakfast will probably go faster. All that’s left to do is mix in the milk, eggs, and bananas. Follow these easy steps to make delicious pancakes right at your campsite:

  1. Mash two bananas in a medium bowl using the back of a fork until smooth.
  2. Crack the egg into the bowl, add the milk, and beat everything together until smooth.
  3. Add the dry ingredients and mix until just combined—don’t worry about small lumps! If the batter’s too thick, add up to ¼ cup more milk.
  4. Heat a nonstick pan or cast iron skillet over medium-low to medium heat. Add ghee, butter, or coconut oil (especially for cast iron!) and swirl to coat the pan.
  5. Pour ⅓ cup of batter into the center and sprinkle chopped walnuts on top. Cook for 2-3 minutes until bubbles form on top and the edges are set. Flip and cook the other side until golden brown.
  6. Continue with the remaining batter, adding more ghee, butter, or oil as needed.

We used a few simple tricks to make these banana pancakes even more delicious. When you want to start your day with some pancakes, consider these tips:

  • At home, we measure and combine the flour, brown sugar, cinnamon, baking powder, and salt in a resealable bag or container. Pack the banana, egg, milk, and walnuts in separate containers.
  • We  typically opt for a nearly black banana for a richer flavor but as long as your banana is fully ripe and you can mash it up, you’ll have perfect pancakes.
  • For an extra indulgent touch, sprinkle some chopped dark chocolate onto the pancakes before flipping them. It’s the secret ingredient in our famous banana bread recipe!

  • Ground hemp seeds & ground flax seeds: These two ingredients will give your pancakes an extra boost of healthy fats and fiber.
