Here’s how I make a delicious, easy, and convenient Berry Pound Cake Skillet for camping. Let’s explore!

At Home

For added convenience, I usually prepare these steps in advance at home:

1. Toast walnuts: First you need to chop the walnuts, then put them in a small pan over medium or high heat. Roast until they are golden brown and fragrant. However, you need to pay attention to the seeds because they can burn quickly when they start to brown. Don’t forget to put the seeds in a container with a tight-fitting lid and store at room temperature until use.

2. Make the raspberry sauce: In a medium saucepan, combine the raspberries, half the lemon juice and lemon zest, and half the sugar. Cook over medium heat until sugar dissolves and berries are warmed through. While cooking, mash some of the berries with a fork or potato masher to make a sauce, leaving some whole. Set aside to cool.

3. Make the blueberry sauce: Do the same with the blueberries, using the remaining lemon juice, lemon zest and sugar. After completing these 2 sauces, transfer them to a container with a tight-fitting lid and store in the refrigerator until used.

4. Prepare Mascarpone: Let mascarpone cheese soften, then mix with powdered sugar. Place in a resealable plastic bag. Then put it in a plastic bag, cover and refrigerate until needed.

At Camp

All you need to do at the campsite is:

5. Bake the Pound Cake: Heat a cast iron grill pan or griddle over medium-high heat. Brush both sides of each pound cake slice with butter, then bake until nicely browned and golden brown, about 1-2 minutes.

6. Assemble the dessert: Place two slices of pound cake on a plate. Cut the corner of the plastic bag and shape the mascarpone onto the cake. Scoop some of the berry mixture on top, then sprinkle with roasted walnuts. Finally, enjoy!

Alternatives

If you don’t have mascarpone cheese, another amount of cream cheese can be used. Just add a little powdered sugar to balance its sour, less sweet flavor.

You can choose other fruits according to your preference, such as strawberries, peaches, and pineapples to make the sauce.

Besides, you can replace the fruit sauce with fresh cream or vanilla ice cream to top the grilled pound cake slices, sprinkle with warm chocolate sauce or caramel sauce and sprinkle with some nuts. Also a fresh and great choice!

Conclusion

Just like that, you immediately have a Berry Pound Cake Skillet dish to enjoy. Add it to your menu now for your next camping trip!
