One of the things I do before I go camping is make a list of easy camping meals. My criteria are dishes that are easy to make, have simple ingredients, and are easy to clean up afterwards.
And I discovered Camp Stove Chilaquiles, which requires just three main ingredients: tortillas, sauce, and eggs with a pan, you have created a fantastic meal! 🍳🥬

When I make this dish, I split it into two steps: step 1 is to fry the tortilla triangles, and step 2 is to cook the chilaquiles.
I do both of them in the same skillet, which can be a nonstick or cast iron skillet. I think a 10 inch to 12 inch pan is good for this amount of food.

- 1/3 cup vegetable oil
- 6 corn tortillas, cut into wedges
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1 (7 oz) can el Pato sauce (or 1 cup tomato sauce and a chopped jalapeno)
- 1/2 teaspoon salt
- 2 – 4 eggs
- Optional toppings: avocado, toast, coriander, grated cheese, fresh lime slices, etc.

Follow my instructions, it takes about 25 minutes to prepare and make Camp Stove Chilaquiles:
Step 1: Fry the Tortilla Triangles
First, I heat the oil in a skillet over high heat. Once it is hot, add the tortilla triangles in a single layer and fry for a few minutes until golden brown, flipping once.
When both sides of the tortilla are golden brown, remove and set aside on a paper towel to drain the oil.
Proceed with the rest of the tortillas as well.
Step 2: Make the Chilaquiles
Still with that skillet, I lower the heat to medium and toss the red onions in the remaining oil for a few minutes. Until they begin to soften, add the garlic and saute for around 30 seconds.
Next, I add the tomato sauce, salt, and a splash of water to the skillet. Set the sauce on low heat, then add the fried tortillas and mix them in.
To cook the eggs, I move the tortillas to the outside edges of the skillet to create a well in the center. Drop the eggs into the well and cook to your liking (You can scramble them or cover the skillet and allow them to simply poach in the sauce).
Finally, serve the chilaquiles with the topping of your choice. I usually use them with some avocado and toast. You can use any topping you like and enjoy the meal.
Tips for Your Better Dish
Here are a few tips I discovered while making this dish that will make it taste better and also save you time:
- Make the Tortillas Ahead: If you don’t want to fry the Tortillas on the camp stove, you can do this step at home or you can use store-bought tortilla chips, which will taste the same and save you a lot of time.
- Make the Sauce: You can make your own sauce by mixing tomato sauce, jalapeño, and a pinch of oregano instead of the Pato sauce. Pack the homemade sauce in a small container for easy transport.
- Customization Idea: You can add more protein to the meal by adding shredded chicken, sausage, or black beans.
