I never thought that Chicken Pad Thai would make it onto my list of easy camping meals. But a friend from Thailand proved me wrong, when she made this dish quickly and simply during our camping trip, completely changing my perspective.
Instead of the usual simple dishes often seen on camping trips, Chicken Pad Thai was an extremely delicious, unexpected, and flavorful delight, providing a perfect combination of flavor and convenience.

Ingredients
The ingredients I prepared below will be for 4 servings:
- 7 oz Pad Thai noodles
- 2 tablespoons of sesame oil
- 1 large chicken breast, cut into bite-sized pieces
- 1 small onion, diced
- 1/2 cup of bean sprouts
- 1/4 teaspoon of salt
- 2 eggs, beaten
- 2/3 cup of Pad Thai sauce (you can buy it in store).
- 1/2 cup of sliced green onions
- 1/2 cup of chopped cilantro
- 1/4 cup of chopped peanuts
Equipment
Follow my recipe, you’ll only need a pot for cooking the noodles and a pan to prepare the chicken, vegetables, and eggs (any pan will work). The pot will allow the noodles to cook quickly, while the pan is for sautéing the chicken, vegetables and tossing everything together.
With such simple equipment, you can absolutely make Chicken Pad Thai even when you are outdoors, such as when you are camping!
How to Cook Chicken Pad Thai

Now that everything is ready, let’s start making this Chicken Pad Thai together!
- Boil the Noodles:First, boil a pot of water, then remove the pot from the heat and add the noodles. Let the noodles soaking for about 8 to 10 minutes, until they are soft but still a little chewy.
- Cook the Chicken and Vegetables:Meanwhile, heat 2 tablespoons of sesame oil in a pan over medium heat. Once hot, add the chicken, onion, bean sprouts, and salt. Continue to stir-fry until the chicken is fully done and the onion begins to brown.
- Scramble the Eggs:Move the chicken to one side of the pan, lower the heat, then add the eggs, mix well thoroughly .
- Combine all together:Once the noodles are ready (from step 1), the chicken is fully cooked, and the eggs are scrambled, use tongs to lift the noodles out of the water. Add them to the skillet, then pour in the Pad Thai sauce.
- Garnish and Serve:Finally, top with green onions, fresh cilantro, and chopped peanuts. Ready to enjoy!
Optional Step At Home
If you’re not using store-bought Pad Thai sauce, you can still prepare it yourself at home in advance to save time. With these ingredients:
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of lime juice
- 2 tablespoons of brown sugar
- 1 tablespoon of chili-garlic sauce (or Sriracha, if you prefer)
- 1 tablespoon of fish sauce
To combine all the sauce ingredients, put them in a small, lidded bottle or jar and shake well. Pack in your cooler.
Adjustments for Vegetarians/Vegans
If you are a vegetarian or vegan, you may still enjoy this dish by replacing the chicken and eggs with tofu, as well as your favorite vegetables and mushrooms. And for the sauce, simply replace the fish sauce with vegetarian fish sauce to create a great dish that suits you.
