- ¼ teaspoon cayenne pepper (optional) – for a spicy kick, you can omit it if you don’t like spicy food
- 1 teaspoon salt – to taste
- 2 tablespoons tomato paste – adds flavor and thickens the curry sauce
- 1 (14 oz) can coconut milk – canned coconut milk is the best but you can also substitute with cashew cream or light coconut milk.
- 1 (14 oz) can chickpeas, drained – easy, high in protein, and perfect for a filling meal. You can substitute with pan-fried tofu or cauliflower.
- 1 lemon, cut into wedges – a little freshness at the end makes all the difference.
- Cilantro, chopped – for flavor and color.
- ¼ cup yogurt (optional)

I first thought this dish would take a long time to prepare but I was surprised that it only took a few minutes to prepare:
- Firstly, heat the oil or ghee in a pot over medium heat. Add the diced onions and saute until soft and translucent, no need to brown them.
- Secondly, roast the spices. Add the Garam Masala, turmeric, ground ginger, cinnamon and cayenne pepper (if you like). Stir for a while to blend the spices and let the aromas permeate the air.
- Thirdly, make the sauce. Pour in the coconut milk and stir in the tomato paste and salt. Mix well until the tomato paste is fully incorporated into the coconut milk.
- Fourthly, add the main ingredients. Stir in the drained chickpeas and let everything simmer over medium to low heat. Stir occasionally and let the sauce thicken to your liking. This step usually takes me about 10 to 15 minutes.
- Next, prepare the toppings. While the curry is simmering, prepare any side dishes you like. We served it with rice and cauliflower. Naan bread is one of our most favourite. You can try this by toasting the naan bread over a campfire.
- Finally, eat and enjoy. Transfer the chickpea curry onto a plate, add a squeeze of fresh lime juice, a spoonful of cool yogurt (optional) and sprinkle with chopped coriander.
