Here’s our Instant Pot Pulled Pork recipe! It’s never been easier to make delicious meals your whole family will love.

Step by step instructions:

  1. Prepare the marinade: Using a bowl, mix together the brown sugar, onion powder, chili powder, garlic, salt, and pepper in the ratios I mentioned above. I’m sure this marinade is very flavorful.
  2. Cut and marinate the pork: Trim any excess fat from the pork shoulder if you don’t like it, then cut it into 2-3 large pieces for easier handling and cooking. Soak the pork and roll it evenly in the sauce you prepared earlier, wait a bit for the meat to absorb the spices then it will be much more delicious.
  3. Sear the pork: I recommend adding a small amount of cooking oil to the bottom of the pot to prevent burning. Sear each piece of pork, turning it over until it develops a brown crust. Use tongs to gently flip it, this will add more flavor to your dish.
  4. Clean the pot: When the meat is almost done, take it out of the pot and clean the pot. Add water to the pot and scrape off any burnt bits from the bottom of the pot. This will make the meat tastier and also prevent it from burning.
  5. Add the marinade and continue cooking the pork: Return the browned pork to the Instant Pot. Add ½ cup BBQ sauce and ¼ cup apple cider vinegar, making sure the sauce covers the pork pieces.
  6. Cook the pork in the pressure cooker: Close the lid on the Instant Pot and set the valve to Seal. Select Pressure Cook and set the timer for 40 minutes. Once finished, let the pressure release naturally for 10 minutes, then carefully switch to Quick Release.
  7. Shred the pork: Remove the cooked pork and place it in a clean bowl. Use two forks to shred the pork into desired shapes. My tip for you is to use the remaining water in the pot to pour over the shredded pork to keep the meat tender and moist.

Choosing Meat

In my opinion, pork shoulder remains the most cost effective and tasty option, which also provides the meat with tenderisation properties when used in Instant Pot Pulled Pork. To get the juiciest results, go for boneless pork shoulder or pork butt, and if possible get them pre-brined.

Remove excess fat if you are not a fan of it, but ensure that there is enough fat to help in the flavoring of the food. You can use pork tenderloin instead, which is a good alternative if you are in need of lean meat.

Preserving

Store the meat in the refrigerator or freezer, and it will last for up to 6 months. Be sure to add a little broth to keep it from drying out.

If you are taking the meat camping, pack it in a sealed container or bag and reheat it before serving.
