Ingredients
Some of the ingredients I used are readily available, I think you already have them; just a little preparation is needed for the rest.
The amount of ingredients I used makes 4 kabobs:
For the Marinade
- ¼ cup olive oil
- ½ cup chopped cilantro
- 1 tablespoon honey
- 2 teaspoons minced ginger
- 1 lemon, juiced
- 1 teaspoon salt
For the Skewers
- ½ pound boneless, skinless chicken thighs (cut into 1-inch pieces for best texture and flavor)
- 1 medium red onion (cut into 1-inch pieces)
- Pineapple wedges (cut into 1-inch cubes—see note for tips!)
Equipment
To make these Pineapple Chicken Skewers, you’ll need 2 tools:
- Skewers: I use metal skewers, you can reuse them for other meals, they are very useful.
- Heat resistant gloves: you will need these if you are grilling food over a campfire to avoid burns, camping safety is a top priority.
How to Make Pineapple Chicken Skewers
Prep Time: 10 minutes | Cook Time: 10 minutes |
No matter how clumsy you are at cooking, you can make them delicious with the recipe I’ve put together.
Follow these steps:
At Home
There are some things you can do at home in advance:
- Cut ingredients: Wash and cut them, cut chicken into bite-sized pieces. For vegetables like bell peppers and onions, cut them into 1-inch thick pieces.
- Make marinade: Put marinade ingredients in a jar, cover tightly.
- Storage: Put all prepared ingredients in an airtight container or bag and refrigerate in an airtight container until you are ready to cook!
At Camp
At the campsite, you just get started on the preparation and grilling.
- Marinate the chicken: Mix all the marinade ingredients in a bowl. Once the marinade is ready, add the chicken and mix well to let the meat absorb the spices for about 1 hour.
- Preheat the oven or campfire: Prepare the oven or campfire while waiting for the chicken to absorb the spices.
- Skewer the ingredients: Skewer the ingredients including chicken, pineapple, bell peppers, onions. You can skewer each skewer with only 1 specific ingredient, this way the food will cook more evenly. However, this method is not as beautiful as skewering the ingredients together.
- Grill: Now place the beautiful skewers on the grill and grill. Remember to grill all sides evenly, check and flip evenly for about 10 minutes.
- Enjoy: Remove the skewers from the grill and enjoy while the food is still hot.
Tips for Pineapple Chicken Skewers
I leave you with these tips when making Pineapple Chicken Skewers:
- If you are using wooden or bamboo skewers, soak them in water for about 10 minutes before skewering the ingredients, this will prevent them from burning when grilling. For more convenience, consider using metal skewers like I did.
- Using fresh pineapple ensures the best sweetness, and you can’t change the size of the pineapple pieces if you use canned.
- A note for you is to remember to cut the ingredients to similar sizes to ensure that they are all cooked evenly.
- Let the meat marinate and absorb the spices for at least 1 hour, its flavor will be more intense.
Enjoy the food after a busy cooking time and how you feel.
